Ingredientes

  • 1 cup green lentils
  • 1 cup farro
  • 2 cups broccoli florets
  • 4 cups vegetable broth
  • 3 tablespoons olive oil
  • 4 cloves, minced garlic
  • 1, juiced lemon
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • to taste salt
  • to taste black pepper

Método de Preparação

  1. Rinse lentils and farro separately
  2. In a pot, cook lentils in 2 cups of vegetable broth for 20-25 minutes
  3. In another pot, cook farro in 2 cups of vegetable broth for 25-30 minutes
  4. Steam broccoli florets until tender-crisp
  5. Heat olive oil, sauté garlic
  6. Mix all ingredients with spices and lemon juice
  7. Season to taste
  1. Add lentils and 2 cups broth to bowl, cook 20 min/100°C/speed 1
  2. Remove and set aside
  3. Without cleaning bowl, add farro and 2 cups broth, cook 25 min/100°C/reverse/speed 1
  4. Place broccoli in Varoma, steam 12 min/Varoma/speed 2
  5. Mix all ingredients 30 sec/reverse/speed 2

Dicas

  1. Cook lentils just until tender to prevent mushiness
  2. Toast farro before cooking for nuttier flavor
  3. Don't overcook broccoli to maintain nutrients
  4. Can be stored in refrigerator for up to 3 days
  5. Add pine nuts or feta cheese for extra flavor
