Ingredientes

  • 600g hake fillets
  • 100g all-purpose flour
  • 2 units eggs
  • 150g breadcrumbs
  • 100ml olive oil
  • 1 unit lemon
  • to taste salt
  • to taste black pepper
  • handful, chopped parsley

Método de Preparação

  1. Cut the hake fillets into medallion-sized portions
  2. Season with salt, pepper and lemon juice
  3. Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs
  4. Coat each medallion first in flour, then egg, and finally breadcrumbs
  5. Heat olive oil in a large frying pan
  6. Fry the medallions for 3-4 minutes on each side until golden
  7. Drain on paper towels
  8. Garnish with parsley and lemon wedges
  1. Place breadcrumbs in Thermomix bowl, mix 10 sec/speed 8, remove and set aside
  2. Without cleaning the bowl, place parsley, mix 5 sec/speed 7, remove and set aside
  3. Coat fish manually as per traditional method
  4. Place Varoma dish and tray in position
  5. Add 500g water to Thermomix bowl
  6. Place breaded medallions in Varoma
  7. Cook 15 min/Varoma/speed 1
  8. For a crispier result, finish in a pan with a little oil

Dicas

  1. Ensure the oil is hot but not smoking before frying
  2. Don't overcrowd the pan when frying
  3. Pat the fish dry before coating to ensure better adherence
  4. Can be served with mashed potatoes or salad
  5. For a healthier version, can be baked in the oven at 200°C for 20 minutes
  6. Leftover breadcrumbs can be stored in an airtight container
