Ingredientes

  • 4 chicken breasts, diced
  • 2 cans (400ml) coconut milk
  • 2 limes (juice and zest)
  • 3 tbsp curry powder
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 tbsp ginger, grated
  • 2 tbsp vegetable oil
  • 1 cup fresh cilantro
  • 2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 2 red chilies, sliced

Método de Preparação

  1. Heat oil in a large pan over medium heat
  2. Sauté onions until translucent
  3. Add garlic and ginger, cook for 2 minutes
  4. Add curry powder and stir
  5. Add chicken and cook until golden
  6. Pour in coconut milk and fish sauce
  7. Add lime zest, juice, and brown sugar
  8. Simmer for 25 minutes
  9. Add chilies and cilantro before serving
  1. Add onions, garlic, ginger to bowl: 5 sec/speed 5
  2. Add oil: 3 min/120°C/speed 1
  3. Add chicken: 5 min/120°C/reverse/speed soft
  4. Add remaining ingredients: 25 min/100°C/reverse/speed soft
  5. Add cilantro: 10 sec/speed 3

Dicas

  1. Use full-fat coconut milk for richer sauce
  2. Marinate chicken in lime juice for 30 minutes before cooking
  3. Adjust chili amount according to spice preference
  4. Serve with jasmine rice or naan bread
  5. Leftovers taste even better the next day
