Ingredients

  • 2 mixed colors, sliced bell peppers

  • 2 tablespoons olive oil

  • to taste black pepper
  • 1/4 cup pine nuts

  1. Cook quinoa according to package instructions
  2. Massage kale with olive oil and lime juice
  3. Sauté bell peppers until slightly soft
  4. Combine all ingredients in bowls
  5. Top with diced avocado and pine nuts
  6. Season with salt and pepper
